For this month's blog hop, we are following the theme 'What's your cup of tea?'. Since I am weak and cannot handle caffeine I drink rooibois tea. It is a lovely warm, fragrant, caffeine tea from South Africa. I decided to adapt my grain free carrot cake recipe to become a rooibos rhubarb cake. I was sure it would work. Hmm. All I can say is that this cake is great for weight loss. Why? It is so 'THE FLAVOUR HAS LEFT THE BUILDING' that you will not want to eat more than your first bite! Yay!
I was so disappointed with the cake that I went for a stress relief walk up a big hill! I am still upset about it. *cry* Oh well. I did not have time to cook another 'tea themed' cake, so here is the horrible rooibos rhubarb cake:( This is what not to do when designing a recipe by yourself. See, even though the cake is bad, you still learn something from this post:) And that is ok, right?
Rooibos rhubarb cake
It is horrible. The end.
What you do not need
- 1 cup almond meal
- 3 tablespoons butter, melted
- 1 egg
- 1 tablespoon baking powder
- 3 tablespoons stewed apple
- 1 rooibos tea bag
- 3 tablespoons boiling water
- 2 sticks rhubarb, peeled, one sliced into small pieces and one sliced into long pieces
- 1 teaspoon honey
- Slivered almonds, for decoration
What you do not need to do
- Preheat oven to 180 degrees. Line a loaf tin.
- Place tea bag and hot water into a cup and let it steep.
- Combine almond meal, butter, egg and baking powder in a bowl.
- Add stewed apple, rhubarb slices and honey and mix until combined.
- Add tea to the mixture.
- Place the cake mixture into the prepared tin.
- Top with long rhubarb pieces and slivered almonds.
- Bake for 30-40 minutes. My oven is pretty useles so just watch your cake carefully.
I was trying to be 'healthy'. In the end, I did achieve this goal. I did not eat any dessert and I went for a walk. Great. However, it would have been nice to have shared a nice cake with you all. This cake was all wrong. Strange because the cake upon which I based this one, was fantastic!
Next weekend I will share a grain and sugar packed YUMMY dessert:) I do not know if I will bother with grain free desserts in the future as only one out of a handful has turned out well. This really annoys me!
My blog confuses me a bit. I am so health conscious yet my blog is about all that is unhealthy! 90% of what I share with you is unhealthy. Though 90% of things I actually consume are very healthy. Oh well. Meh.

Oh no!! It is disappointing when you put effort into something and it doesn't work out the way you had hoped. Your cake looks pretty..
ReplyDeleteI made 4 batches of cookies this weekend until I was satisfied with the recipe. I sent Mr Fresh off to work with a container of cookies and Punky off to kinder with a morning tea gift for his teachers to try to get some of them out of the house :)

Oh dear! You are so funny, even in your disappointment. But you know, I often think we learn most from our mistakes so you should definitely not give into despair. I've found it often takes two goes to get a new recipe right.
ReplyDeleteI had a look at your recipe and I'm wondering if additional sweetener would have made a difference? Rooiboos (I also love it) has a very strong, earthy flavour and rhubarb is very savoury/tart too. I noticed you had stewed apple and honey but I'm wondering what it would have been like if you'd added say 1/2 - 3/4 cup honey? Because when I've made rhubarb tarts before my kids spat them out because they weren't sweet enough. Maybe worth a shot? Or onto the next project!
I normally like rhubarb plain with no sweetener. This cake really had 0 flavour. It was just like eating mush. You could tell there were almonds in it...I think. I spat it out pretty quickly haha:)

Like you, I've posted about more than one failure in the kitchen...like my "tallow tragedy". :-) But experimenting in the kitchen is what the best chefs in the world do, right? ReplyDeleteDon't be disheartened. We all make mistakes in the kitchen but at least you were brave enough to post about yours! As Christina said, recipe development takes practice and a few shots to get it just right. The idea is there but I know that sometimes how something works in your mind doesn't necessarily always work in reality. I always try to trial in small doses (don't like wasting ingredients) and when it's on the right track then go the whole hog. Good luck with your future endeavors!

ReplyDeleteAwww I'm so sorry your cake didn't work out the way you envisioned. We all have those experiences, but it's what you learn from that makes you a better cook in the end. :D I do have to say, I love the way you shared your disappointment in a humorous way.
ReplyDeleteOh dear - I recently had a tasteless rhubarb and pear cake fail too... I will eat most things but this one actually got thrown out - says a lot! Oh well, like you said, on to the next - but thanks for sharing what not to do ;)
