I think the bitterness of the cake will depend on the chocolate you use. I used Lindt 85% dark chocolate which contains only 14% sugar. Three years ago, I first tried this chocolate and thought it tasted like dust. But now, I really like it! If you want a sweeter cake, you could use Coles brand dark chocolate which contains an amazing 50% sugar!
I purchased some Coles dark chocolate with 50% sugar and kindly donated it to my fellow accountants at work. Too much sugar!
Chocolate plum cake (grain free)
I used a loaf tin with dimensions 21cm by 11cm
What you need
Hmm taking phtoos in morning sun light - does not work. DO NOT USE OIL
- 1 cup almond meal
- 1 teaspoon baking powder
- 1 egg
- 3 tablespoons melted butter
- 1/2 teaspoon vanilla essence
- 3 squares Lindt Excellence 85% dark chocolate, chopped
- 1 tablespoon cocoa powder
- 2 tablespoons natural yoghurt
- 2 tablespoons full cream milk
- 2 plums (one chopped into little pieces and the other sliced)
- 2 teaspoons sugar
- Sprinkle cinnamon
What you need to do
- Preheat oven to 180 degrees and line a loaf tin with baking paper.
- Combine almond meal and baking powder.
- Mix in egg, butter, vanilla essence, chocolate, cocoa powder, yoghurt, milk, chopped plum and sugar.
- Place mixture into the tin, top with sliced plums and sprinkle with cinnamon and sugar if you so choose.
- Bake for 40 minutes, or until cooked through.
As I mentined at the start, this cake is somewhat bitter. Next time I might use milk chocolate to delete all bitterness. I like to eat bitter chocolate by itself, but not in a cake. The plums offset the bitterness, but more plums could have been used on top of the cake.
Make sure you check if your cake is cooked when you take it out of the oven. I did the skewer thing, but upon cutting the cake, I realised it was still not cooked all the way through.
So, not perfect...room for improvement...but it looks pretty:)

DeleteGood for you for going ahead and baking it! I don't often like the taste of raw batter and find that it often tastes quite different from the end product (often it seems sweeter). And this cake is perfect for those non sweet tooths out there :)

DeleteThis looks lovely - I love the combination of flavours and textures. If it was a little bitter I wonder if the addition of a vanilla custard to pour on top might have been good? Or even vanilla ice-cream. Either way, it's a perfect afternoon tea cake.
